Chia seeds are a fantastic source of omega-3 fatty acids, fiber, and protein, making this pudding a great choice for a healthy breakfast or snack. The addition of pumpkin not only adds a rich, creamy texture but also brings a wealth of vitamins and antioxidants to the mix. I love to top mine with chopped nuts and a sprinkle of granola for added crunch, but you can customize it with your favorite toppings, such as fresh fruit or coconut flakes.
What I appreciate most about this Fall Chia Seed Pudding is how easy it is to prepare ahead of time. Just mix the ingredients together and let them sit in the fridge overnight to thicken. It’s perfect for meal prep, allowing you to enjoy a delicious, nutrient-dense treat ready whenever you are. Whether you savor it as a hearty breakfast or a satisfying dessert, this pudding will keep you feeling nourished and cozy throughout the fall season!

[Process] | Total Time 20min
Step 1: Prepare the Base
In a mixing bowl, combine 1 cup of your choice of milk (almond, soy, or oat) with ½ cup of pumpkin puree. Mix well until smooth.
Step 2: Add Sweetness and Spices
Add 1 tablespoon of maple syrup, 1 teaspoon of pumpkin pie spice, a pinch of salt, and ⅛ teaspoon of cinnamon along with a pinch of nutmeg to the mixture.
Stir thoroughly to ensure all the ingredients are well combined.
Step 3: Incorporate the Chia Seeds
Gradually mix in ¼ cup of chia seeds to the mixture. If you prefer a smoother texture, you can grind the chia seeds in a blender or spice grinder before adding them.
Step 4: Mix and Rest
Stir the mixture well to prevent clumping. Let it sit for about 5 minutes, then give it another good stir. This will help the chia seeds absorb the liquid evenly.
Step 5: Refrigerate
Transfer the chia pudding to airtight containers or jars, ensuring they are sealed tightly. Place them in the refrigerator and let the pudding sit overnight (or at least 4 hours) to thicken.
Step 6: Serve and Enjoy
Once the pudding has set, give it a good stir before serving. You can top it with your favorite toppings such as chopped nuts, granola, or fresh fruit for added texture and flavor. Enjoy your nutritious Fall Chia Seed Pudding!
